Achillea millefolium.
A hardy perennial from Eurasia, Yarrow is less common in mainstream Australian cooking.
Whilst the leaves and flowers are all edible, they can be bitter, prickly and tough.
We pick only the tiniest little leaves, ensuring they are soft and palatable. Their flavour is still quite aromatic so think of pairing with stronger flavours - ripe cheeses, walnuts, currents.
