With a salty, herbal flavour, Saltbush is found in arid regions as it is drought tolerant and provides feed for livestock when the area is dry and devoid of alternatives.
High in protein, the Saltbush leaves are a nutritious option for incorporating into meals.
- Dried, crushed leaves can be a substitute for salt or used as a salt rub for meats
- The leaves pair well with roast lamb
- Fry them as a crunchy snack or addition to salads
- Blanch the leaves to use in salads or stir-fries
- Add leaves to a pizza for some bush food pizzaz!
